A paróquia da freguesia de Una foi canonicamente instalada no segundo sábado de setembro de 1812, de acordo com o historiador José Gomes Linense. Na ocasião, Nossa Senhora das Dores foi aclamada e eleita Padroeira da Freguesia de Una, atual Ibiúna.
Por volta de 1750, instalava-se no vale de Una, nas terras do bairro Piratuba, Cocais e Ressaca, a família do Dr. Helvidio Rosa, vindos de Sorocaba, formando nestas terras uma importante fazenda com o trabalho de escravos, pertencente ao capitão Manoel de Oliveira Carvalho, denominada Sítio do Paiol. Na sede havia loja de armarinhos, leiteria, selaria, venda e pernoites, tornando o local um ponto de parada destinado a tropeiros e viajantes. Também foi construída pelo capitão a capela sob a invocação de Nossa Senhora das Dores de Una. A prova desse assentamento é um crucifixo histórico encontrado em uma escavação de terras na feitura do açude.
Mais tarde estas terras já sob a denominação de Fazenda Velha dos Rosas, foi adquirida por João Cafezal Domingues e Benedito Domingues. Com a morte do capitão Manoel de Oliveira Carvalho, provavelmente em 1780, suas terras e fazenda passaram a pertencer a seu filho Manoel de Oliveira Costa, que mandou erigir uma capela mais ampla, no mesmo local da capela primitiva, sob a mesma invocação de Nossa Senhora das Dores de Una, para os usos religiosos de sua família, escravos e agregados. Nas imediações da capela foram sendo construídas as primeiras casas de barrote e taipa. Mais tarde, estas terras e fazenda passaram a posse do Capitão Salvador Leonardo Rolim de Oliveira, por ato de compra e venda, já denominada Fazenda Velha de Una.
Cidade Presépio
Em pouco tempo, a Fazenda Velha dos Rosas tornou-se parada obrigatória dos viajantes, mascates e tropeiros, que ascendiam seus fogos em redor do templo. A impressão que se tinha era a de um presépio permanente. E essa impressão viria dar à Vila de Una o cognome de “A Cidade Presépio”.
